More Saison News
Not too much to say except that it has been eight days since this beer was brewed and it is still fermenting like mad with a huge fluff kaursen. It is actually higher then in these pictures now, these were taken yesterday. It is a really dense but fluffy kaursen too. Hopefully this will translate into an incredible head on the actual beer.

What yeast did you pitch again? I know it wasn’t the 565, or the head would be white and almost soapy looking -and I think I remember you saying that they didn’t have the 565 where you went. What was it?

WLP550 – Belgian Ale. As I said before, when I got to the shop they were out of the 565 – Saison yeast, so I punted. Here’s the description: “Saisons, Belgian Ales, Belgian Reds, Belgian Browns, and White beers are just a few of the classic Belgian beer styles that can be created with this yeast strain. Phenolic and spicy flavors dominate the profile, with less fruitiness than WLP500.” If it is not a Saison, then it is a Belgian Specialty Ale – we’ll have to see how it turns out.
This carboy is going to be a bitch to clean – I <3 PBW.
